Stuffed Plantain Bites

We love snacks! We are always trying to find ways to make snack time exciting for our hungry kids. These kids get very bored with food, so it’s  important to switch things up for them. Today we’ll be sharing the recipe for stuffed plantain bites. We hope your kids will enjoy this simple snack.

Ingredients:

1/4 cup of rice

1/4 cup bean blend

1/4-1/2 Tomatoes

Cilantro to taste

1/4 teaspoon Italian seasoning

Salt and peper to taste

2 Plantains

Instructions:

Start by cutting the ends of the plantains. Then, peel the it. Next, cut about 3-4 slices in lengthwise. Once you have your thinly sliced plantains you will get ready to cook them (You can either bake or sauté them, our kids love it when they are cooked with little bit of oil). Get them golden brown by using a little bit of oil in a hot pan. In a mixing bowl, add the cooked rice, cooked bean blend, cilantro, tomatoes, Italian seasoning, and the salt and pepper. Mix all the ingredients together. Once you have your mixture ready, now it’s time to assemble. Lay your plantains on a flat surface, take about a teaspoon of your mixture and put it on top of the plantains (close to the edge). Then roll it up.
